New Recipes
Hello Five Hills Track and Field Family!
As we start our 2010 track season, I would like to remind you to take a look at the tips and recipes on the nutrition page. I will be updating the page often and I invite you to share your nutritious recipes with me so I can post them on our website.
Make sure you check back often and look for our smoothie contest coming soon. Time to start thinking of your favorite smoothie recipes!
Here are some easy and nutritious recipes you can try:
LIGHT LEMON SOUP
6 cups low-sodium chicken broth
1-2 tsp dried dill weed (to taste)
1/2 cup orzo or rice
2 tbsp fresh lemon juice
Place broth, dill weed, and orzo or rice in a large saucepan. Simmer, uncovered, until orzo or rice is tender, about 20 minutes. Stir in the lemon juice and serve.
TOMATO-MOZZARELLA SALAD
1 RED ONION, THINLY SLICED
4 LARGE VINE-RIPENED TOMATOES, SLICED ABOUT 1/2 INCH THICK
1/2 POUND NONFAT OR PART-SKIM MOZZARELLA, THINLY SLICED OR SHREDDED
1/2 CUP CHOPPED FRESH PARSLEY
2 TSP FINELY CHOPPED BASIL
3-4 GARLIC CLOVES, MINCED
BLACK PEPPER TO TASTE
2 TBLS EXTRA-VIRGIN OLIVE OIL
2 TSP RED WINE VINEGAR
Place a layer of onion in a glass or ceramic serving dish. Cover with a layer of tomatoes and a layer of mozzarella. Sprinkle with some of the parsley, basil, and garlic and peppper. Drizzle a little olive oil and a splash of vinegar. Continue to layer the rest of the ingredients. Refrigerate until well chilled.
FRUIT PUNCH
2 cups raspberry puree
1 cup pineapple puree
1/2 cup carrot puree
2 cups cold water
1/4 cup sugar
combine all in blender or food processor and serve over ice
